One Pot Cajun Spiced Haddock
One Pot Cajun Spiced Haddock

Ingredients

Serves 1

  • 1/2 tablespoon Extra virgin olive oil

  • 1/4 onion (small, chopped)

  • 1/2 garlic (clove, minced)

  • 1/2 tomato (large, chopped)

  • 1/4 Green bell pepper (Large, chopped)

  • 1/2 teaspoon Cajun Spice

  • 1 haddock fillet

  • 1/2 teaspoon coriander (chopped)

  • 1/8 lemon (sliced)

  • Sea salt and pepper (to taste)


Directions

  1. Preheat the oil in a deep pan over a medium heat. Add the onion and garlic and sauté for two to three minutes or until softened.

  2. Add the tomatoes, bell peppers and Cajun spice. Stir and cook for three to four minutes or until the tomatoes soften. Season with salt and pepper.

  3. Add the fish fillets to the vegetables. Cover and cook on medium-low for eight to ten minutes, or until the fish is cooked through.

  4. Season with coriander and serve with lemon slices for squeezing. Enjoy!



Top tips:

  • Refrigerate in an airtight container for up to three days.

  • Serve it with your favourite grains, green beans and/or steamed broccoli.

  • One haddock fillet is equal to 150grams or 5.3 ounces.
